American Museum of Baking The American Museum of Baking housed in the Emerson Library of the American Institute of Baking, contains one of the world's largest collections of artifacts on baking history, including the "world's largest collection of baker statuettes and figurines," examples of ancient Egyptian and Roman bakery products, and historical artifacts and other materials from many American bakeries.

The Institute of Baking unique: a combination of professional bakery trade school, basic and applied cereal science research center, and headquarters for an international network of food and worker safety auditors, quality control and HACCP experts and bakery production consultants. The AIB School of Baking teaches applied baking technology from a science-based perspective, which differentiates it from all other baking trade schools in the world. The school also operates one of the few independent training centers for food plant maintenance engineers in the Americas.
